INTRO

From Ture Waji's Sookoo Coffee at the Shoondhisa Kebele in Guji — a naturally processed blend of two JARC-selected varietals grown at 2,173 MASL in one of Ethiopia's most celebrated specialty coffee regions. Round, sweet, and deeply fruited, with a versatility that makes it equally at home as a filter or an espresso. In the cup: berry compote, strawberry juice, and a hint of white sugar sweetness.

THE PRODUCER

Sookoo Coffee was founded in 2018 by Ture Waji and his brother Assefa in the Odo Shakiso area of Guji — a region that has rapidly established itself as one of Ethiopia's most exciting specialty origins, celebrated for its exceptional growing altitude, rich volcanic soils, and the distinctive cup character of its naturally processed lots. Sourcing from surrounding Kebeles, with each lot reflecting the specific terroir of its origin, Sookoo Coffee has become one of Guji's most respected operations — a testament to Ture's expertise, passion, and commitment to quality and community.

This lot comes specifically from the Shoondhisa Kebele, featuring two varietals selected by the Jimma Agricultural Research Centre in 1974 for their resistance to coffee berry disease: Gibirinna 74110 and Serto 74112. At 2,173 MASL in Guji's cool, high-altitude growing environment, these varietals produce naturally processed coffees of deep sweetness, vibrant fruit character, and exceptional aromatic complexity.

THE PROCESS

The Natural process at Shoondhisa involves:

🍒 Hand-picking — Gibirinna 74110 and Serto 74112 cherries selectively harvested at peak ripeness 🔍 Sorting — Carefully sorted before drying to ensure consistency and quality ☀️ Raised-bed drying — Whole cherries dried on raised beds, turned regularly to ensure even drying throughout

The raised-bed natural drying is the defining step — the beans rest inside the intact cherry throughout the drying period, slowly absorbing the fruit's sugars and building the berry compote richness, strawberry juice brightness, and white sugar sweetness that define this lot while the exceptional altitude of Shoondhisa keeps the process clean and well-structured throughout.
