INTRO

A hand-selected Hybrid Washed Gesha from Mikava, chosen by Hydrangea during a visit to the farm in November. Yellow florals, Meyer lemon, and mixed berries — round and juicy in the body, refined in the acidity, and elegant from start to finish.

THE PRODUCER

Mikava Estate is run by Paul Doyle and his son Kevin in Marsella, Risaralda — a remote region reached only by hours of winding mountain roads through rural Colombia. Paul's background in coffee spans decades, beginning with a coffee cart, then roasting, before founding the farm in the early 2010s. Their focus on small, day-by-day harvests is uncommon in Colombia and demands extraordinary attention to detail — but it's that precision that has taken Mikava's coffees to national and world competition stages consistently. This lot was one of two selected by Hydrangea directly during their farm visit, tasted and chosen alongside Paul and Kevin.

THE PROCESS

Mikava's Hybrid Washed method begins with a short fermentation in thick-walled steel tanks designed to maintain stable temperatures, with the tanks rotatable to ensure even microbial activity throughout the batch. The approach is calibrated to the specific lot — adjusting for sugar content, temperature, and varietal — allowing it to range from intense clarity to subtle complexity depending on conditions. After fermentation, the coffee is dried one cherry thick on raised, shaded beds for precise airflow and temperature control, with controlled silo drying used to maintain cleanliness and consistency through to the finish.

THE CUP

Clarity, composure, and nuance in equal measure — this is Gesha at its most polished. Soft yellow florals and Meyer lemon lift the cup, mixed berries carry through the middle, and a gentle roundness holds it all together into a finish that lingers quietly and beautifully.
