INTRO

An experimental Elixir Washed lot from Felipe Arcila's Finca Santa Monica, co-fermented with fruit and spices to produce a distinctly aromatic, botanical cup.

THE PRODUCER

Felipe Arcila farms Castillo at Finca Santa Monica, situated at 1450–1500 metres above sea level in Quindío, Colombia—a department renowned for its lush, high-altitude coffee-growing terrain within the country's celebrated Coffee Triangle.

THE PROCESS

The Elixir Washed with Fruit and Spices process at Finca Santa Monica involves:

  • 🍒 Cherry Selection — Careful picking at peak ripeness

  • 🧪 Co-Fermentation — Fermented with added fruit and spice elements

  • 🚿 Washing — Thorough washing following fermentation

  • ☀️ Drying — Careful drying

This experimental co-fermentation process creates the distinctive botanical and aromatic complexity found in the cup.

THE CUP

Bright lemongrass leads into herbaceous chartreuse notes, with juicy dragon fruit rounding out the finish. A vibrant, aromatic expression of Castillo shaped by Felipe Arcila's experimental Elixir Washed process at Finca Santa Monica.

This lot’s process Elixir (Fruit & Spices)

About this variety

Castillo is designed to produce reliable quality across Colombian growing regions. It can be clean, sweet and balanced, but the farm and processing usually tell you more about the exact flavour.

Why this one is different
  • Colombia
  • Quindio
  • 1450-1500 masl
  • Washed

In Colombia, Castillo includes regional selections intended for different coffee-growing areas. Two Castillo lots can therefore taste quite different.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

Castillo refers to a group of Colombian cultivars developed for resistance to coffee leaf rust while maintaining useful quality and agronomic performance across different growing regions.

Classification Colombian cultivar group

Technical lineage Caturra crossed with Timor Hybrid-derived material, followed by regional selection.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
