INTRO
A Cup of Excellence honey lot from the Oliveira family's Sitio Pedro Varinhas in Manhuaçu, placing 4th in the Washed & Honey Category of the 2025 Brazil Cup of Excellence. Careful processing delivers a notably rounded mouthfeel and abundant sugar notes. In the cup: daisy, honey plum, brown sugar, and herbal tea.
THE PRODUCER
The Oliveira family are third-generation coffee producers in Manhuaçu, running the farm as a family collective in which spouses, children, and siblings all take part in cultivation and processing, passing expertise down across generations. In 2009, the farm claimed first place in a quality competition hosted by the COORPOL Cooperative, a turning point for their focus on specialty coffee. Since then the family has continued investing in refining processing and quality control, aiming to let each harvest faithfully express the terroir, traditions, and passion behind it.
Arara is a natural hybrid of Yellow Catuaí and Obatã, well known for rich sweetness and a clean, consistent flavour profile.
THE PROCESS
Cherries are depulped while retaining part of the mucilage, then dried slowly inside greenhouse drying patios. The stable environment allows sweetness and flavour complexity to develop fully.
The slow drying inside greenhouse patios is the defining step. The stable conditions let the retained mucilage's sugars develop without disruption, building the honey plum and brown sugar sweetness behind this cup.
THE CUP
Rounded and sweet — daisy florality up front, honey plum and brown sugar sweetness through the middle, and a herbal tea finish. A notably full mouthfeel with abundant sugar notes.
