INTRO
There are few things better than a classic washed Ethiopian profile, and this coffee is a lovely example. Soft florals greet you at first sip, with stone fruit like cooked peaches making up the bulk of the fruit character. In the cup: soft florals, cooked peach, dark sugar, and black tea.
THE PRODUCER
Haider Abamecha owns and operates two-going-on-three coffee farms and several washing stations in Jimma, and has worked in coffee for over 30 years. He spent five of those years working abroad in Saudi Arabia, returned to Ethiopia in the late 2000s, and launched his first export venture in 2011. Today he oversees several operations throughout Jimma, built within a framework of ethical farming and social welfare. His farms and collection sites hold certifications not often found in the region, including Organic, Rainforest Alliance, and C.A.F.E. Practices, and he has implemented worker welfare programmes and regularly invests in rural infrastructure around Limu Kossa. He is a tireless advocate for coffee quality, social equity, and environmental stewardship.
THE PROCESS
After being handpicked at peak ripeness, the cherries are pulped and the parchment is fermented in water overnight. The next morning it is thoroughly rinsed and spread on raised beds to dry until the optimal moisture content is reached.
The overnight underwater ferment followed by raised-bed drying is the defining combination. It's what builds the clean, classic washed profile, with soft florals and stone fruit sweetness.
THE CUP
Classic and smooth: soft florals greet you first, with cooked peach stone fruit through a round body, finishing like black tea sweetened with dark sugar.
