About DAK Coffee Roasters

DAK is an Amsterdam roastery founded by two Canadians from Montreal. Its small team selects fully traceable coffees, balancing experimental lots with classic origins, then roasts them for clean, bright and sweet cups that keep specialty coffee welcoming and fun.

Roaster notes

Purple Rain

From the highlands of Halo Barite village in Gedeb, Purple Rain marks our first release from the Halo washing station — and what an entrance it makes. This anaerobic natural Ethiopian bursts with expressive fruit character, vibrant florals, and a silky sweetness that feels both playful and polished.

In the cup, it’s a kaleidoscope of purple candies, lilac florals, and tropical fruit, bringing together everything we love about modern Ethiopian naturals: expressive aromatics, balanced acidity, and clean, juicy structure.

Origin: Halo Barite, Gedeb, Ethiopia
Process: Anaerobic Natural
Variety: Ethiopian Heirloom
Altitude: 1950–2100 MASL
Roast Level: Light
Producer: Halo Washing Station

Tasting Notes
🍍 Tropical Fruits – bright and juicy, like pineapple and passionfruit
💜 Purple Fruits – reminiscent of grape candy and ripe plum
🌸 Florals – delicate lilac and violet, soft and perfumed

In the Cup
A vibrant and fruit-forward cup that captures the joy of Ethiopian coffee at its best. It’s sweet, aromatic, and bursting with purple energy, yet elegantly balanced — the perfect harmony of fun and finesse.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.

About this origin Ethiopia is widely recognised as coffee’s birthplace and holds extraordinary genetic diversity. Washed coffees often show jasmine, citrus and tea-like clarity, while natural lots can bring ripe berries, tropical fruit and deep aromatic sweetness.

How it works The whole coffee cherry is dried with the fruit intact, often on raised beds or patios. The dried fruit is removed afterwards.

Typical influence Natural coffees are often described as sweet and full-bodied, with ripe berry or tropical-fruit flavours and sometimes a gentle wine-like note.

About this variety

This is a mixed or locally selected coffee population rather than one precisely identified variety. Expect the lot’s tasting notes to be more useful than a single variety stereotype.

Why this one is different
  • Ethiopia
  • Guji
  • Natural

In Ethiopia, local selection, replanting and farm history can shape a mixed population over many generations.

Natural processing often brings a rounder, fruit-led expression, which can make the same variety feel quite different from a washed lot.

A little background

Several plant types may be growing and harvested together, often reflecting a farm or region’s planting history.

Classification Mixed population

Technical lineage The individual plants are not fully separated or identified, so a single genetic lineage would be misleading.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
