DETAILS

  • Washing Station: Danche
  • Region: Gedeb, Ethiopia
  • Varietal: Heirloom
  • Process: Anaerobic Washed
  • Elevation: 2,200 masl

INTRO
A floral, tea-forward Ethiopian from Danche Washing Station in Gedeb, and an unusual one for how it's made — anaerobic fermentation, then washed. The sealed ferment builds complexity while the washing step keeps the cup clean and light. Wild florals lead, peach iced tea sits in the middle, and a black tea note holds the finish. In the cup: wild florals, peach iced tea, and black tea.

THE PRODUCER
This lot comes from the Danche Washing Station in Gedeb, growing Heirloom varieties at 2,200 masl.

THE PROCESS
Ripe cherries are selectively handpicked, hand-sorted, and floated. They're then de-pulped and left in sealed tanks to ferment for 48 hours without the presence of oxygen. After fermentation, the parchment is washed twice with clean water before drying on raised beds for 15-20 days.

The sealed 48-hour anaerobic fermentation followed by a double wash is the defining step — it's what builds the floral complexity behind the wild floral and peach iced tea character, while the washing keeps the cup clean and light rather than heavy or ferment-forward.

THE CUP
Floral and clean — wild florals lead, with a peach iced tea sweetness sitting in the middle and a black tea note holding through the finish.

About this origin Ethiopia is widely recognised as coffee’s birthplace and holds extraordinary genetic diversity. Washed coffees often show jasmine, citrus and tea-like clarity, while natural lots can bring ripe berries, tropical fruit and deep aromatic sweetness.

Typical influence Washed coffees are often described as clean and bright, with clear flavours, lively acidity and a crisp finish.

About this variety

This is a mixed or locally selected coffee population rather than one precisely identified variety. Expect the lot’s tasting notes to be more useful than a single variety stereotype.

Why this one is different
  • Ethiopia
  • Gedeb
  • 2200 masl
  • Washed

In Ethiopia, local selection, replanting and farm history can shape a mixed population over many generations.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

Several plant types may be growing and harvested together, often reflecting a farm or region’s planting history.

Classification Mixed population

Technical lineage The individual plants are not fully separated or identified, so a single genetic lineage would be misleading.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
