INTRO

A washed Chiroso from Jorge Rojas that delivers more sweetness than the process usually promises. Forest fruits gelato, florals, and black tea — clean and precise, with a richness that feels earned rather than added.

THE PRODUCER

Jorge Rojas grows Chiroso at Finca El Proceso in Planadas, Tolima, at 2,050 MASL — high enough to slow cherry development and build the concentrated sweetness that makes this lot stand out for a washed coffee.

THE PROCESS

After each harvest day, cherries were transported down to Jorge's La Roca processing plant in Planadas, where they were floated to remove defects, pulped, and left to rest overnight. Washed the following morning, then dried for fifteen days in marquesinas.

THE CUP

Everything a washed Chiroso should be and then some — structured and floral, with a gelato-like fruit sweetness that lingers long past the last sip.
