About DAK Coffee Roasters

DAK is an Amsterdam roastery founded by two Canadians from Montreal. Its small team selects fully traceable coffees, balancing experimental lots with classic origins, then roasts them for clean, bright and sweet cups that keep specialty coffee welcoming and fun.

Roaster notes

Playful, wild, and full of energy.

This lot from Finca Los Nogales is a blend of Typica, Caturra, and Cenicafé varieties—all processed using Oscar Hernández’s signature high-intervention washed method. It’s experimental, bold, and packed with personality.

As a mega blend, flavour will shift slightly from bag to bag—part of what makes it so engaging. The core character leans tropical, with vibrant berry notes and occasional flashes of lemongrass for lift and brightness.

Selected by DAK for its unpredictability, flavour depth, and pure fun-in-the-cup.

Flavour Notes: Tropical Fruits, Berries, Lemongrass

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.

How it works The fruit is removed from the coffee seed. Water and fermentation then help clear away the sticky layer before the seed is dried.

Typical influence Washed coffees are often described as clean and bright, with clear flavours, lively acidity and a crisp finish.

About this variety

Several varieties make up this lot. That can create a layered cup, but their individual flavours cannot be separated honestly after the coffee is combined.

Why this one is different
  • Colombia
  • Huila
  • Washed

These varieties were grown or combined in Colombia. The producer’s lot details and tasting notes are the best guide to how they work together.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

The varieties are shown exactly as supplied for this coffee. We do not invent one combined genetic or flavour profile for the group.
