From Jorge Zamora at La Lima in Cajamarca — a Cup of Excellence finalist Gesha grown organically at 1,900 MASL in the cool highlands of northern Peru. Aromatic, creamy, and deeply sweet, with the florality and refined structure that slow cherry maturation at altitude consistently produces. In the cup: floral notes, ripe peach, and candied citrus.
THE PRODUCER
Jorge Zamora farms nine hectares organically in Cajamarca — one of Peru's most established specialty growing regions, where the cool highland climate, volcanic soils, and distinct seasonal rainfall create exceptional conditions for high-quality Arabica production. His commitment to quality has brought real recognition: La Lima has been featured among the final selections at Peru's Cup of Excellence, establishing Jorge as one of Cajamarca's most credible and celebrated producers.
At 1,900 MASL, cherry maturation is slow — allowing sugars to develop fully before harvest and building the deep natural sweetness and aromatic concentration that define this Gesha. Jorge's careful, low-temperature fermentation approach further enhances that sweetness and complexity, preserving the delicate florality and clean structure that allow the Gesha variety's character to express itself with full clarity.
Gesha, first collected from the coffee forests of Ethiopia in the 1930s and brought to global prominence at the 2005 Best of Panama competition, has found a compelling and rapidly developing home in Peru's high-altitude growing regions — where producers like Jorge are proving that Peruvian Gesha can stand alongside the world's most celebrated expressions of the variety.
THE PROCESS
The Washed process at La Lima involves:
🍒 Hand-picking — Gesha cherries selectively harvested at peak ripeness 🔧 Depulping — Outer skin removed before fermentation 🧪 Low-temperature fermentation — Beans fermented at a carefully controlled low temperature to enhance sweetness and preserve delicate aromatic complexity 💧 Washing — Thoroughly washed after fermentation to remove all residue ☀️ Drying — Dried to optimal moisture content
The low-temperature fermentation is the defining step — by fermenting at a controlled cool temperature, Jorge slows microbial activity and extends the fermentation window, building enhanced sweetness and aromatic complexity while preserving the Gesha's intrinsic florality and the clean, refined structure that define this cup.
