A debut lot from Luz Divia Fierro and her husband Elpidio at El Mesón in Acevedo, Huila — a first introduction to a young and careful producer partnership that Coffee Collective are bringing to the world for the first time. Not like the typical Pink Bourbon: vivid acidity brings a juicy definition to the cup, combined with an intense exotic fruit sweetness. In the cup: caramel warmth, cantaloupe melon, and bright red currant.
THE PRODUCER
Luz Divia Fierro and Elpidio represent a younger generation of coffee growers in Huila, and in just over a year they have built a thoughtful and principled approach to both cultivation and labour at El Mesón. Their commitment extends to the people around them — through collaboration with the Pickers Project, they ensure that skilled harvest workers are paid above market rates, reflecting a values-led approach that goes beyond the cup.
Pink Bourbon is one of Colombia's most celebrated emerging varietals — prized for its complex aromatic profile, vivid acidity, and the tropical fruit sweetness that the Huila microclimate draws out so effectively at altitude.
THE PROCESS
The Washed process at El Mesón involves:
🍒 Hand-picking — Cherries selectively harvested at peak ripeness ⏳ Cherry rest — Whole cherries rest for 24 hours before depulping, allowing fruit sugars to interact more deeply with the seed and enhance sweetness 🔧 Depulping — Outer skin and fruit flesh removed after the resting period 🧪 Fermentation — Beans fermented to break down remaining mucilage 💧 Washing — Thoroughly washed to remove all fermentation residue ☀️ Drying — Dried to optimal moisture content
The 24-hour cherry rest before depulping is the defining step — a simple but effective technique that deepens fruit expression and builds the exceptional sweetness that makes this Pink Bourbon so distinctive, while the clean washed finish preserves the vivid acidity and clarity that define the cup.
