INTRO From Elto Coffee's Bare drying station in Sidama — a passion-project microlot from founders Eliyas Dukamo and Atiklit "Mimi" Dejene, composed of JARC selections from smallholder outgrowers around the woreda. Elevation shows from the first sip: one of the cleanest naturals around, layered with complex citrus, stone fruit, and raspberry, and a smooth milk chocolate sweetness. In the cup: citrus, stone fruit, raspberry, milk chocolate, and peach iced tea.

THE PRODUCER Eliyas Dukamo and Mimi Dejene founded Elto Coffee, combining their joint expertise in Ethiopian specialty coffee. Eliyas is part of the storied Dukamo family in Bensa, while Mimi built her experience doing QC for Gesha Village. Together, the couple now operates two drying stations through Elto Coffee, focused on high-grown, high-quality microlots across the Sidama Zone — this release drawn from their Bare station and outgrower smallholders in the surrounding area.

THE PROCESS This lot is a Natural — cherries are picked at peak ripeness, delivered whole to the drying station by smallholders, floated for quality, and spread to dry on raised beds in the sun. This straightforward, careful approach is what preserves the clean clarity behind the citrus, stone fruit, and raspberry character in the cup, despite the lot's natural processing.

THE CUP Exceptionally clean for a natural — complex citrus and stone fruit up front, raspberry threaded through, and a sweet, smooth milk chocolate body. The finish is long and tea-like, reminiscent of peach iced tea on a hot summer day.
