SHYIRA WASHING STATION sits high in the Nyabihu mountains of Rwanda—an origin that sets the benchmark for altitude-grown excellence. Established in 2017 and led by Evariste Hagumimana in collaboration with Muraho Trading Co., the station works with 943 smallholder farmers. At 2,300 MASL, it’s the highest washing station in the country. Volcanic soils and a cool, misty climate define Shyira’s celebrated terroir.

THE WASHED PROCESS begins with careful hand selection of ripe cherries, pulped using a waterless Eco Pulper system. A 12-hour dry fermentation enhances natural sugars before the beans are sorted and slow-dried on raised beds for up to 35 days. NOMAD curates this lot for its syrupy profile—expect notes of honey, panela, and dried fruit, all wrapped in a clean, silky finish.

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-10 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 10). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
