Finca Deborah – Illumination, Panama

Illumination is a vibrant expression of Gesha from Finca Deborah - showcasing the clarity and intensity made possible by Panama’s high-altitude terroir.

Expect a candy-like sweetness with notes of mango and violet, lifted by a bright citrus edge and a smooth, creamy texture. A standout lot that highlights both variety and place with precision and elegance.

Process:

This lot is processed using a Washed Carbonic Maceration (CM) method, where depulped cherries undergo extended fermentation in CO₂-rich tanks.

Only perfectly ripe Geisha cherries (21–24 BRIX) are selected, then pulped with some mucilage left intact. During fermentation, pH, temperature, and CO₂ levels are closely monitored to ensure consistency.

Afterward, the coffee is dried slowly on shaded raised beds, avoiding direct sunlight to protect the parchment. Conditions inside the drying houses are carefully controlled.

Once moisture reaches around 11%, the coffee is bagged in GrainPro and stored in a cool, stable environment in a bodega.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
