INTRO

Servio Botina produces some of our favourite coffees in all of southern Huila. We discovered his coffee several years ago and have never looked back. In the cup we find pomegranate, lime zest, and strawberry.

Every time we have the opportunity to work with coffee from Servio and his family, it is special. Producing exceptional quality once is difficult—but producing it consistently, season after season, is truly extraordinary. We are deeply grateful to the Botina family for their intentionality, dedication to their craft, and continued pursuit of excellence.

Located in Purutal, San Agustín, Huila, Servio's farm sits at 1870 metres above sea level, where careful farm management and meticulous processing combine to create some of the most consistently exceptional coffees in southern Huila.


ABOUT PINK BOURBON

Pink Bourbon is a relatively new variety being grown primarily in and around Huila, Colombia. The variety has been identified genetically as an Ethiopian Landrace, but unfortunately, we cannot be any more specific as to its origins until there is a larger genetic database. This variety has become celebrated for producing vibrant, fruit-forward profiles that showcase the best of Colombian coffee.


THE PROCESS

The Washed process at Finca El Cedro involves:

  • 🍒 Hand-Picking — Careful selection at peak ripeness
  • ⏱️ In-Cherry Hold — 24 hours
  • 🌊 Floating — Removal of defects
  • 🔧 De-Pulping — Mechanical removal of skin and mucilage
  • ⏱️ Dry Fermentation — 36 hours
  • ☀️ Raised-Bed Drying — 20 days until moisture content reaches ~10%

This meticulous processing creates the vibrant, fruit-forward profiles Pink Bourbon is celebrated for.


THE CUP

Some of our favourite coffees in all of southern Huila from a producer we discovered several years ago. Pomegranate, lime zest, and strawberry with exceptional clarity. The Botina family's intentionality, dedication to their craft, and continued pursuit of excellence shine through—producing exceptional quality consistently, season after season.

What is the roast recency?

SEY doesn't advertise a roast preference to Filter or Espresso, instead they are roasted for the best amongst both - often called Omniroast. That being said, SEY  typically roast light.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
