INTRO

This selection from Lisbeth Quispe marks SEY's first lot from the Sandia Valley in southern Peru โ€” a region they have long been eager to explore. The result is immediately arresting: a delicate, fruit-forward cup with a clarity that belies the remote and challenging conditions in which it was grown.

In the cup we find apricot, lychee, and Pink Lady apple.


THE PRODUCER

The Sandia Valley, situated in the Puno region of southern Peru, has long held the attention of discerning buyers. Despite its extraordinary potential, sourcing from this area has remained exceptionally difficult โ€” small farms, remote terrain, and complex logistics from valley to port have kept it largely out of reach for the specialty market.

Lisbeth Quispe is, for SEY, the first producer to bridge that gap from this valley. Her farm sits at a remarkable 1,950 MASL, where the altitude and microclimate conspire to create the conditions for exceptional coffee. SEY hope this selection marks the beginning of a lasting relationship with this under-explored and richly promising region.


THE PROCESS

The Washed process at Yanacocha involves:

  • ๐Ÿ’ Selective Harvest โ€” Hand-picked at peak ripeness
  • ๐Ÿ“… In-Cherry Rest โ€” Held in cherry for 24 hours
  • ๐Ÿ’ง Float & Sort โ€” Floated to further remove defects
  • ๐Ÿ”ง Depulping โ€” De-pulped on the same day
  • ๐Ÿงช Dry Fermentation โ€” Fermented for 36 hours
  • โ˜€๏ธ Raised Bed Drying โ€” Dried on raised beds for 20 days until moisture content reaches approximately 10%

This careful, traditional washed approach preserves the intrinsic clarity and terroir-driven character of the SL9* variety, allowing its distinct fruit expression to shine through unimpeded.
