Moonwake is excited to present Fincas del Putushio Washed Typica Mejorado, a brilliant and refined expression from the emerging specialty coffee region of Putushio in southern Loja, Ecuador. This washed lot showcases Typica Mejorado’s delicate complexity and vivid clarity — offering a cup that’s simultaneously bright, floral, and layered with sweetness.


The Producer:

This coffee comes from Fincas del Putushio, a collaboration between visionary producers Pepe Jijón, his son José Jijón, and Francisco Vintimilla, working high in the Andes of Loja Province. Pepe — already well‑regarded for his work with Finca Soledad in Intag — and his team are helping to carve out a new frontier for Ecuadorian specialty coffee by focusing on rare varietals like Typica Mejorado and meticulous processing. Their commitment to quality and community is evident in every aspect of this microlot.


The Process:

This lot is processed using a traditional washed method aimed at preserving clarity and showcasing terroir. Fully ripe cherries are hand‑picked and depulped on the same day of harvest, then fermented for about 16 hours with mucilage remaining to develop balanced acidity and sweetness. After a thorough deep water rinse, the beans are dried slowly — typically for around 30 days in shaded conditions — ensuring even and controlled moisture reduction. This low‑intervention approach lets the high‑altitude Typica Mejorado express its innate, delicate characteristics.


The Cup:

In the cup, this delivers a bright and deeply nuanced profile. Expect grapefruit 🍊 citrus brightness up front, followed by a tart yet refined gooseberry 🍇 tang. A honey‑like sweetness 🍯 emerges mid‑palate, adding richness without heaviness, while soft wildflower 🌼 aromatics provide an elegant, lingering finish. The overall balance of acidity, sweetness, and floral nuance makes this coffee particularly rewarding when brewed as a filter.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
