The Producer:
This coffee comes from Fincas del Putushio, a collaboration between visionary producers Pepe Jijón, his son José Jijón, and Francisco Vintimilla, working high in the Andes of Loja Province. Pepe — already well‑regarded for his work with Finca Soledad in Intag — and his team are helping to carve out a new frontier for Ecuadorian specialty coffee by focusing on rare varietals like Typica Mejorado and meticulous processing. Their commitment to quality and community is evident in every aspect of this microlot.
The Process:
This lot is processed using a traditional washed method aimed at preserving clarity and showcasing terroir. Fully ripe cherries are hand‑picked and depulped on the same day of harvest, then fermented for about 16 hours with mucilage remaining to develop balanced acidity and sweetness. After a thorough deep water rinse, the beans are dried slowly — typically for around 30 days in shaded conditions — ensuring even and controlled moisture reduction. This low‑intervention approach lets the high‑altitude Typica Mejorado express its innate, delicate characteristics.
