The ProcessThis coffee was processed using a classic washed method, designed to emphasize clarity and definition in the cup. Cherries were harvested at peak ripeness, depulped, and fermented under carefully controlled conditions before being thoroughly washed and dried. The restrained approach allows the inherent character of the Ethiopian Landrace varieties to shine, highlighting fruit clarity and brightness without overshadowing nuance.
In the CupThe cup is bright and lively from the first sip. Juicy citrus acidity leads the way, followed by a refreshing sweetness reminiscent of watermelon. As it cools, tropical granadilla notes emerge, adding depth and a gentle exotic character. The body is clean and silky, with a crisp, refreshing finish.
