Intro

This washed Pink Bourbon from Finca Monteblanco is a vibrant and expressive example of how producers through thoughtful processing and growing can produce variety-driven character. Bright, playful, and incredibly clean, this coffee balances candy-like sweetness with crisp tropical acidity, making it both eye-catching and dangerously drinkable.

The Producer

Rodrigo Sanchez is one of Colombia’s most respected and innovative producers. Based in Huila, he has spent years refining both agronomy and processing at Finca Monteblanco, pushing the boundaries of what Colombian coffees can express while remaining deeply rooted in terroir. Rodrigo’s work with rare varieties like Pink Bourbon has helped redefine the region’s reputation for clarity, sweetness, and complexity.

The Process

This lot is fully washed, allowing the intrinsic qualities of Pink Bourbon to shine. Ripe cherries are selectively harvested, depulped, and fermented under carefully controlled conditions before being thoroughly washed and slowly dried. The result is a coffee with exceptional clarity, high aromatic lift, and a polished, transparent structure.

In the Cup

The cup opens with a burst of pink bubblegum sweetness. As it cools,  starfruit acidity brings a crisp, tropical brightness, while lemongrass adds a clean, citrus-herbal edge that keeps the profile lively and aromatic. The finish is light, with sparkling acidity,  showcasing why Pink Bourbon remains one of Colombia’s most exciting varieties.

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.


What does 'Filter' or 'Espresso' Roast mean?

Typically filter is roasted lighter than espresso, though this is not always the case. Several factors play into what brands a Manhattan coffee as 'filter' or 'espresso', which includes the roast profile - i.e. how the beans are roasted, not just how developed a roast it is. It doesn't preclude you from using the beans for espresso though!
