A bold and playful experimental lot from The Naughty Dog — built on Chiroso from Jhoan Vergara's Finca Las Flores in Huila, one of Colombia's most respected addresses for progressive processing. Washed and then infused with the character of Caribbean rum barrels, the result is a deeply indulgent and aromatic coffee that blurs the boundary between specialty coffee and confectionery. In the cup: chocolate pralines, Caribbean rum, coconut, and warming spices.
THE PRODUCER
Jhoan Vergara's Finca Las Flores in Huila has become one of Colombia's most respected farms for experimentally processed micro-lots, with Jhoan building a reputation for precision and innovation at every stage of production. Situated at 1,750 MASL, the farm's elevation and Huila's distinct microclimate provide the ideal foundation for the complex, expressive Chiroso that underpins this lot. Chiroso is an elongated, Typica-like variety found primarily in Colombia's Antioquia and Eje Cafetero regions, prized for its vibrant tropical fruit character and naturally expressive aromatic profile — qualities that make it particularly well suited to experimental processing.
THE PROCESS
The Washed and Rum Barrel Infused process at Finca Las Flores involves:
🍒 Hand-picking — Chiroso cherries selectively harvested at peak ripeness 🔍 Sorting — Only the finest cherries selected before processing 🔧 Pulping — Outer skin and fruit flesh removed from the beans 🧪 Fermentation — Beans fermented to break down remaining mucilage 💧 Washing — Thoroughly washed to remove all fermentation residue 🛢️ Rum barrel infusion — Washed coffee placed in contact with Caribbean rum barrels, allowing residual rum character to be absorbed into the beans ☀️ Drying — Dried to optimal moisture content after infusion
The rum barrel infusion is the defining step — the residual sugars and aromatic compounds from Caribbean rum impart the warm, indulgent character that makes this lot so distinctive, layering the Chiroso's natural sweetness and tropical fruit potential with deep confectionary and spiced notes, all on a clean, washed foundation.
