INTRO
Guava, purple grapes, and blackberries, carried by a wonderful structure and a long, juicy finish. Selected for its expressive fruit character and the way that intensity holds together in the cup. In the cup: guava, purple grapes, and blackberries.
THE PRODUCER
Deiro Garcia explores how controlled fermentation shapes coffee's flavour, with experiments across different strains of yeast and bacteria that build on traditional processing to develop distinctive profiles. He grows this Pink Bourbon at his Lord Voldemort farm in Pitalito at 1,800 masl, with an ambitious approach centred on understanding fermentation and how carefully controlled changes influence the final cup.
THE PROCESS
Cherries are harvested at peak ripeness and enter an initial 48-hour anaerobic fermentation in tanks. A second anaerobic stage follows for 72 hours, during which leachate, the liquid released during fermentation, is continually reintroduced to promote an even fermentation. The coffee is then dried as a natural under canopies for 22 days.
The two-stage anaerobic fermentation with reintroduced leachate is the defining feature. It's what builds the fruit-forward, tropical, dark-berry expression and sustained juicy finish.
THE CUP
Tropical guava meets the rounded sweetness of purple grapes and the deeper character of blackberries. A well-defined structure gives the fruit shape, and the finish stays juicy and lingers.
