INTRO A delightfully clean, green tea and botanical-forward Chiroso from Pablo Montoya, just up from Fray's farm in Pabón. Grassy matcha notes open the cup while hot, with a citric kick reminiscent of kumquat or blood orange through the middle, cooling into lovely herbal tones of nettle and lemon balm. In the cup: matcha, kumquat, and lemon balm.

THE PRODUCER Pablo Montoya manages a second-generation coffee farm at 2,100 masl in Pabón, Urrao. Despite being one of six siblings, Pablo was the only one willing to stay and carry on the family's coffee tradition after his father passed away. Now 61 with children of his own, he's remained dedicated to coffee throughout his life, expanding the farm by purchasing two additional neighbouring parcels. His daughter now owns a separate farm that Pablo helps manage, while his son stays at the main farm to assist with pruning, picking, and processing. In recent years, Pablo has taken a renewed interest in elevating quality and processing standards, with a particular focus on Chiroso.

THE PROCESS This lot is Washed, a method that removes the fruit before fermentation and drying — allowing Chiroso's naturally clean, botanical character to come through with clarity, building the matcha and citric kumquat brightness that define this cup.

THE CUP Clean and green tea-forward — grassy matcha notes while hot, with a citric kumquat and blood orange kick through the middle, cooling into lovely herbal tones of nettle and lemon balm. A standout harvest that exemplifies what makes Chiroso special.
