INTRO Part of the Hachi Project, an international collaborative operation spanning four farms across Colombia and Panama — "Kokumitsu" (meaning "black honey or molasses") from Rocky Mountain Farm sings with one of the cleanest, brightest acidity structures around, despite its indulgent name. An immediate burst of lemon juice opens the cup, unfolding into raspberry, fig, and plum, with a long, sweet cane sugar finish. In the cup: raspberry, lemon juice, and cane sugar.
THE PRODUCER Rocky Mountain Farm sits in Santa Clara, Chiriquí, between 1,400 and 1,600 masl, managed by third- and fourth-generation farmers Alan and Diana Hartmann. The farm's rich, biodiverse climate and agroforestry techniques help maintain its volcanic soil, and it acts as a centralized point for the Hachi Project's broader operations — a model for scalable, sustainable farming that consistently produces high quality year over year.
THE PROCESS This lot went through a classical Washed process, executed with meticulous care and precision — evidenced by its aggressively clean cup profile. Paraneima is a variety often difficult to roast light, tending to land soft and easy to burn, but this lot landed unusually dense, allowing for a heavier roast that really focused in on its brightness.
The dense bean structure, combined with meticulous washed processing, is the defining factor here — it's what allows this Paraneima to hold onto such a clean, bright acidity that's rare for the variety.
THE CUP Bright and precise — an immediate burst of lemon juice opens the cup, unfolding into raspberry, fig, and plum crossing paths with one another. The finish is sweet, clean, and long-lasting, with a lovely cane sugar note that lingers.
