INTRO A traditionally processed Natural Red Bourbon from Bambito Estate in Chiriquí — an extremely intense, fruited profile with a slightly lactic body reminiscent of a mango and pineapple smoothie. A bright ruby grapefruit acidity rounds out the cup while hot, cooling into a cleaner lemon-lime note with ripe apricot. In the cup: pineapple, mango smoothie, and ruby grapefruit.
THE PRODUCER Bambito Estate has been producing coffee in Chiriquí since the early 1900s, now in its 4th and 5th generation under Priscilla and her son Ivan. Sitting between 1,660–1,800 masl with two natural springs, the estate runs its own cupping lab, greenhouse, and wet mill — attention to detail that extends across their prize-winning washed Gesha as well as their Caturra, Catuaí, Yellow Catuaí, and Red Bourbon plantings. Each year, Priscilla and Ivan refine their fermentation protocols in search of new flavour profiles, and they've built a reputation not just for quality but for genuine warmth and generosity with everyone who visits the farm — including years spent cupping and discussing sample roast profiles with green buyers new to the industry.
THE PROCESS This lot is a traditionally processed Natural — cherries are dried whole, allowing the fruit to impart its character directly into the bean. This straightforward approach is what builds the intense, lactic-tinged fruit profile behind the pineapple, mango, and grapefruit character that define this cup.
THE CUP Intensely fruited, with a slightly lactic body reminiscent of a mango and pineapple smoothie. Bright ruby grapefruit acidity leads while hot, cooling into a cleaner lemon-lime note with ripe apricot.
