INTRO
This lot from the talented young producer Luis Muños is the first from a new project underway in Gaitania. Ripe berries and tamarind lead, with a lime zest brightness. In the cup: ripe berries, tamarind, and lime zest.
THE PRODUCER
Luis Muños is a young, second-generation producer from Gaitania, Tolima. He spent much of his early life managing his family's farm and those of neighbours before establishing his own. In 2016, he won the regional competition "La Mejor Suavidad." SEY is honoured to present his 100% Pink Bourbon separation and looks forward to seeing how his work develops.
Pink Bourbon is known for the complexity of its acidity and fruit characteristics. The look of the seeds and plant, along with its distinct flavour profile, point to it being some kind of Ethiopian Landrace, but to SEY's knowledge it has not yet been genetically tested, so its identity can't be stated with certainty. They hope to have it tested with World Coffee Research in the near future.
THE PROCESS
The Washed process for this lot involves:
🍒 Hand-picking — cherries harvested at peak ripeness
💧 Floating — floated to remove defects
🌙 In-cherry hold — held in-cherry for 48 hours
🌱 De-pulping — cherries de-pulped
⏱️ Fermentation — fermented for an additional 60 hours
🚿 Washing — washed clean after fermentation
☀️ Raised-bed drying — dried on raised beds until moisture reaches roughly 10%
THE CUP
Bright and fruit-forward: ripe berries and tamarind lead, with a lime zest finish. A strong first showing from a new project in Gaitania.
