INTRO
A new coffee from continued exploration of Huila — Sidra remains relatively rare in Colombia, though it's beginning to appear as producers diversify their varietals. Soft botanicals lead, with nectarine sweetness and a wildflower honey finish. In the cup: soft botanicals, nectarine, and wildflower honey.

THE PRODUCER
It's been remarkable to see the diversification of varieties cultivated in Huila over the last few years. Sidra is still rare in Colombia, but exploring different varieties has been instrumental in the elevated quality seen from talented producers like Lizeth Samboni — supporting these efforts plays a meaningful role in the region's continued rise in quality.

While Sidra's exact germ line is unknown, the variety — colloquially named in Ecuador and now cultivated in many coffee-growing countries — is understood to be an Ethiopian Landrace. Ethiopia is widely acknowledged as coffee's geographic origin and home to extraordinary genetic diversity, with DNA testing identifying more than 60 distinct varieties. How these varieties made their way to other parts of the world remains the subject of ongoing research and debate, and Ethiopian Landrace germ lines are increasingly playing a role in developing new climate-resilient varieties and hybrids.

THE PROCESS
Cherries are hand-picked at peak ripeness, floated to further remove defects, then de-pulped the same day. The coffee dry-ferments for 48 hours, is washed, and dries on raised beds until moisture reaches 10.5%.

The 48-hour dry fermentation is the defining step — it's what builds the soft botanical character and nectarine sweetness that define this cup, finishing on a wildflower honey note.

THE CUP
Soft and aromatic — botanical notes lead the cup, with nectarine sweetness through the middle and a wildflower honey finish. A promising early result from Huila's ongoing varietal diversification.
