INTRO
September's first time featuring a coffee from Liliana Ramírez and her farm in the Anzá region, a very clean and juicy Chiroso. A memorable malic acidity reminiscent of juicy pears pairs with sweet pomegranate and bright citrus, with a sparkling light body and a sweet stone fruit finish. In the cup: juicy pears, pomegranate, and bright citrus.
THE PRODUCER
Liliana Ramírez tends approximately 1,000 Chiroso trees on her small farm, Finca El Yolombo, placing her among Colombia's smallest specialty producers, yet her coffee consistently shows the quality of careful, hands-on farming, with exceptional quality control throughout production. Her partnership with Desarrolladores, the exporter who discovered her farm and supports her with best practices, has been crucial in bringing her Chiroso to the international market.
Chiroso is a newer variety grown primarily in Antioquia, becoming very popular in Colombia for its quality potential. It has been genetically identified as an Ethiopian Landrace, though nothing more specific is known.
THE PROCESS
The coffee is processed by "Cochadas," a traditional small-farm practice in which a new picking is de-pulped into the previous days' coffee every 4–7 days and homogenised. Liliana harvests every two weeks, usually over three days: she harvests Monday, pulps after floating in the afternoon, harvests Tuesday, pulps after floating and blends with Monday's coffee, harvests Wednesday, pulps after floating, and washes all three days' harvest on Thursday. The majority of the lot is fermented in water, creating a cleaner profile without excess funk.
The three-day Cochadas blend, fermented in water, is the defining approach. It's what builds the clean, juicy profile and malic pear acidity behind this cup.
THE CUP
Clean and juicy: a memorable malic acidity like juicy pears leads, with sweet pomegranate and bright citrus, and a sparkling light body finishing on sweet stone fruit.
