INTRO
Mellow Yellow from Los Patios in La Plata, Huila — a co-fermented field blend developed by the Los Patios R&D team that blends the traditional chocolatey profile of Colombian coffee with a delicate, memorable peach sweetness. Smooth and approachable, with a sweet peach character that sits gently alongside the coffee's inherent qualities. In the cup: peach and passion fruit.
THE PRODUCER
Los Patios is a dedicated processing hub in the La Plata region of Huila, working with local smallholder producers whose farms typically sit between 1,600 and 1,900 MASL and span around three hectares each. Cherries are carefully grown and harvested by the surrounding farming community before being transported to Los Patios, where the R&D team applies their innovative co-fermentation techniques to unlock each lot's full potential.
The field blend draws on the diverse varieties grown across the smallholder farms in the La Plata area — a combination of cultivars that together provide the balanced, traditionally structured foundation that makes this lot ideal for co-fermentation. The resulting cup is both familiar and surprising — the coffee's inherent qualities complementing rather than competing with the peach character introduced during processing.
THE PROCESS
The Peach Co-Fermentation process at Los Patios involves:
🍒 Hand-picking — Cherries selectively harvested at peak ripeness by local smallholder producers 🌬️ Initial aerobic fermentation — Cherries fermented aerobically for 12 hours before de-pulping 🔧 Depulping — Outer skin removed before transport to Los Patios 🍑 Peach co-fermentation — De-pulped coffee combined with a commercial peach concentrate and a proprietary solution, fermenting together for two days to infuse the beans with peach precursors ☀️ Monitored drying — Dried for 12–16 days with careful monitoring to ensure even drying and preserve cup and bean quality
The two-day peach co-fermentation is the defining step — by combining a commercial peach concentrate with a proprietary solution during fermentation, the Los Patios R&D team imparts a delightful and nuanced peach sweetness directly into the bean, balanced throughout by the field blend's natural structure and traditional Colombian profile.
