INTRO A first-year partnership with the Castro family at Juanachute, one of Costa Rica's pioneering micromills in the Los Santos region of Tarrazú. Clean and balanced, with yellow plum sweetness, macadamia richness, and a caramel finish — a classic Costa Rican cup. In the cup: yellow plum, macadamia, and caramel.

THE PRODUCER Juanachute is run by Luis Anastasio Castro and his family, one of Costa Rica's pioneering micromills. This marks the first year working together, beginning a partnership built on quality, craftsmanship, and a shared passion for specialty coffee. Every cup reflects the family's dedication to sustainability, education, and the future of Costa Rican coffee.

THE PROCESS This lot is carefully Washed and sun-dried on raised beds — a method that removes the fruit before fermentation and drying, allowing Catuaí's naturally clean, balanced character to come through with clarity, building the yellow plum and caramel sweetness that define this cup.

THE CUP Clean and balanced — yellow plum sweetness up front, macadamia richness through the middle, and a caramel finish. A classic, well-crafted expression of Costa Rican Tarrazú.

About this origin Costa Rica’s volcanic highlands and meticulous milling culture produce coffees with clarity and structure. Washed, honey and natural lots commonly bring crisp citrus, ripe stone fruit and polished sweetness with a clean, lasting finish.

About this variety

Catuaí is usually an approachable, balanced variety rather than an extreme one. Expect gentle fruit, sweetness and a rounded finish, with the origin and process doing much of the detailed flavour work.

Why this one is different
  • Costa Rica
  • Tarrazú
  • 1600 masl
  • Washed

This Costa Rican Catuaí is deliberately rich and dessert-like, with cocktail cherry, port wine, milk chocolate and white icing. Those flavours come largely from Don Lica Torres's Black Cherry Natural method, which uses very ripe fruit, re-fermentation and staged drying. The variety provides the base, but this producer-specific process defines the bag.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

Catuaí has been grown in Costa Rica since selected material was introduced during the 1980s. This reviewed Brunca lot is not a conventional national benchmark: it is a specialist expression from Cerro Buena Vista shaped by an unusually intensive natural process.

Identification note The current priority example uses Don Lica Torres's highly distinctive Black Cherry Natural process. Its cocktail-cherry, port-wine and icing notes are process-specific, not a general promise for Costa Rican Catuaí.

Classification Brazilian cultivar

Technical lineage Catuaí was developed in Brazil from Mundo Novo and Caturra. Multiple red- and yellow-fruited selections exist, and individual lines vary between farms and countries.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
