INTRO A new-to-us farm, and a lovely addition to the menu — Santa Helena, a super clean, washed Chiroso from Huila. Red plum and raisin sweetness sit alongside a bright orange note, with a remarkable depth throughout. In the cup: red plum, orange, and raisin.
THE PRODUCER Santa Helena is an 11-hectare family farm cultivating Chiroso, Pink Bourbon, Gesha, and var. Colombia. Working with partners InConexus, the farm continues to refine its practices — this lot the result of that ongoing improvement.
THE PROCESS Ripe cherries were selected, depulped, and fermented for 48 hours. After thorough washing, the coffee dried in parabolic driers for 20-25 days.
The 48-hour fermentation combined with parabolic drying is the defining step — it's what builds the clean structure and remarkable depth behind the red plum, orange, and raisin character in this cup.
THE CUP Super clean and deep — red plum and raisin sweetness up front, with a bright orange note running throughout. A promising first release from a new partner farm.
