Colombia — Jorge Rojas El Jardín Geisha (16-Hour Washed)

Tastes Like — 🍇 Raspberry • 🍇 Raisin • 🥛 Creamy

DETAILS

  • Producer: Jorge Rojas
  • Farm: El Jardín (7 hectares)
  • Region: Tolima, Colombia
  • Varietal: Geisha
  • Process: 16-Hour Washed

INTRO Jorge Rojas may hold the record for most-featured producer on the Prodigal menu — this barely-processed 16-hour washed Geisha features fresh, tart raspberry flavour, the dried fruit quality of raisin, and a cohesive creamy sensation. In the cup: raspberry, raisin, and creamy.

THE PRODUCER Jorge grew this Geisha at El Jardín, a 7-hectare farm in Tolima. As a reaction to the increasing complexity around novel processing techniques, Jorge has opted for a more traditional, minimal-intervention method with this coffee — letting the variety and terroir speak clearly rather than leaning on elaborate fermentation.

THE PROCESS Cherries were floated to remove defects, then pulped immediately. The coffee fermented without water for just 16 hours, was washed the next day, and dried in a deliberately slow process involving three rest periods on days 5, 9, and 13, for a total of 15 days. This extended drying time protects volatile aromatics. Friends at Desarrolladores de Café expertly milled the coffee before it was rushed to Prodigal to preserve quality.

The short 16-hour fermentation combined with the extended, three-pause drying schedule is the defining step — it's what preserves the delicate raspberry and creamy character while keeping the cup traditional rather than fermentation-forward.

THE CUP Fresh and tart — bright raspberry up front, a dried raisin-like fruit quality through the middle, and a cohesive, creamy sensation carrying through the finish.

How it works The fruit is removed from the coffee seed. Water and fermentation then help clear away the sticky layer before the seed is dried.

Typical influence Washed coffees are often described as clean and bright, with clear flavours, lively acidity and a crisp finish.

About this variety

Coffees reported as Gesha or Geisha are often prized for a delicate, tea-like cup with lifted floral aromas and bright fruit. Jasmine, bergamot and peach are common reference points, but each lot can express them differently.

Why this one is different
  • Colombia
  • Tolima
  • Washed

This is a Colombian expression, so it should not be expected to match a Panamanian Geisha exactly. The farm, growing conditions and lot notes matter more than the spelling.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

Why the Gesha / Geisha name matters

Gesha and Geisha are interchangeable spellings, not proof of different varieties. The best-documented Panamanian Geisha and a Colombian research sample have matched T2722, but country and spelling do not prove that every farm planting is identical.

Classification Reported Gesha / Geisha

Technical lineage The reported name alone does not establish one genetic lineage. Confirmed Panamanian T2722 traces to Ethiopian landrace material.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
