INTRO A classic, washed Ethiopian from Habtamu Fekadu Aga — florals, citrus, and stone fruit with a hint of anise spice. A true "drink all day" coffee: balanced, easy-drinking, and free of fatigue. Orange and apricot lead, with anise spice running throughout. In the cup: orange, anise, and apricot.
THE PRODUCER This lot comes from Habtamu Fekadu Aga, a producer whose coffees seem to turn up everywhere in Ethiopia these days. The Goro washing station first came online in 2013 and runs with seven permanent staff and up to 100 seasonal workers — expect to see several more of Habtamu's coffees on the menu this year.
THE PROCESS Pulping left roughly 10% mucilage stuck to the seed — a mini-honey, in effect. The coffee fermented for 24 hours, then was hand-washed and shade-dried, stirred regularly and continually sorted to remove defects throughout drying.
This mini-honey-style pulping is the defining detail — the residual mucilage adds a touch of body and sweetness to what's otherwise a clean, classic washed profile, supporting the orange, anise, and apricot character in the cup.
THE CUP Balanced and easy-drinking — orange and apricot sweetness up front, with anise spice woven throughout. A true "drink all day" coffee: zero fatigue, full of character.
