THE PRODUCER Gitare Coffee Factory is associated with the Kimaratia Farmer's Co-Op, representing 1,000 producing partners. All cherry delivered to the factory is processed using water supplied from the Theta River.

THE PROCESS After pulping, the coffee rests overnight and is washed the following day. It then goes through the traditional Kenyan soaking step before drying on raised tables.

The overnight rest ahead of washing, combined with the traditional Kenyan soak, is the defining detail here — it's what builds the lush, wine-like depth and cranberry brightness behind this cup's signature Kenyan "bigness."
