INTRO
Moonwake's second year working with Paulina Maytan of El Páramo, one of their first relationships in Peru and the producer of a Gesha that got them hooked on exploring the country's coffees. This washed lot shows remarkably clear terroir expression, with a clean, juicy starfruit character leading the cup alongside the soft, sugary sweetness of Rainier cherry. In the cup: starfruit, Rainier cherry, donut peach, and wildflower.
THE PRODUCER
Paulina is a first-generation coffee producer. Born in Cusco, she lived there most of her life and had two daughters. At 40 she separated from her husband and moved closer to family in Amaypata. As a single mother, she looked for opportunities and became interested in coffee as a business for her small family of three. The regional government was offering small plots in Amaybamba to promote coffee, and she received a 1.5-hectare plot, starting with 6 quintals of Catimor a year. In 2021 she planted her first Gesha; the first Gesha harvest came in 2024, and its quality surprised her. She entered the first Incawasi coffee competition in November 2024 and placed 6th.
THE PROCESS
Paulina chose a traditional washed process for this lot because the farm had an extremely rainy 2025 season, and her instinct told her any other processing might be spoiled by the temperature and humidity. She used one of the few sunny days of the season to harvest, wash, and dry the entire lot on the same day.
That instinct-led, same-day washed process is the defining story of this lot. It's what protected the cup's clarity, letting the starfruit and Rainier cherry character come through cleanly.
THE CUP
Clean and juicy: starfruit leads alongside soft, sugary Rainier cherry. As it opens, layers of delicate wildflower florals move through the cup, and as it cools it settles into a sweet, rounded donut peach that brings everything together.
