INTRO
El Paseo is Manhattan Coffee Roasters' newest coffee in their Exceptional category. A vibrant and expressive cup with a smooth mouthfeel: violet, lychee, and dragon fruit. In the cup: violet, lychee, and dragon fruit.
THE PRODUCER
Huver is a third-generation coffee grower, but his close relationship with coffee is recent. Until a few years ago (before 2015) he was a math teacher at a school in Nariño. The farm El Paseo is located near Buesaco, on the Suma Paz trail. It's a family farm where Huver has had the opportunity to work alongside his father, in the family for over 20 years and one of three farms they own. It sits at 1,750 to 1,950 meters, with several native shade trees, on the slopes overlooking the Buesaco valley.
THE PROCESS
This Caturra lot begins with careful selection of fully ripe cherries. The coffee undergoes a 36-hour pre-fermentation in cherry, followed by floating and disinfection with a 2% sea salt solution. It's then transferred to stainless steel tanks for a controlled anaerobic fermentation lasting six days, during which collected leachates and specific enzymes are added to promote a distinctive floral profile. After fermentation, the coffee is mechanically dried below 38°C for 2–3 days, then stabilised for 15 days to ensure consistency and quality.
The six-day anaerobic fermentation with added leachates and enzymes is the defining step. It's what builds the distinctive floral profile behind the violet and lychee character that define this cup.
THE CUP
Vibrant and expressive: violet, lychee, and dragon fruit, with a smooth mouthfeel.
