Panama — Jamison Savage Deborah Farm Geisha "Horizon" (Natural Yeast Inoculated, Hybrid Washed)

Tastes Like — 🌸 Jasmine • 🍍 Pineapple • 🍊 Bergamot • 🍋 Candied Lemon

DETAILS

  • Producer: Jamison Savage
  • Farm: Deborah Farm
  • Region: Chiriquí, Panama
  • Varietal: Geisha
  • Process: Natural Yeast Inoculated, Hybrid Washed Finish
  • Elevation: 1,950 masl
  • Lot: Horizon

INTRO Horizon, one of Deborah Farm's standout Gesha offerings, crafted using a unique hybrid processing method that's earned Jamison Savage's coffees multiple awards in international barista and brewer competitions. Jasmine and pineapple lead, with bergamot brightness and a candied lemon sweetness layered throughout. In the cup: jasmine, pineapple, bergamot, and candied lemon.

THE PRODUCER Jamison Savage's Deborah Farm has earned recognition across international barista and brewer competitions, built on a reputation for precise, innovative processing. Horizon showcases that work through a distinctive hybrid method combining natural fermentation with a washed finish.

THE PROCESS Fully ripe cherries (21–24 Brix) are carefully selected and placed in sealed fermentation tanks with a specific added yeast, left to marinate for over 100 hours. During this time, the yeast breaks down sugars and fruit components, building rich, complex aromas that enhance fruity and floral notes, soften acidity, and add body. After fermentation, the cherries are pulped and dried in a precisely controlled three-stage system designed by Jamison, with temperature, humidity, and airflow carefully monitored to preserve the delicate flavours developed during fermentation. After about 12 days, the beans reach around 11% moisture and rest in GrainPro bags for a stabilisation (Reposo) period of up to 60 days, before final sorting and grading by density, size, and colour.

The over-100-hour yeast-inoculated fermentation combined with the precisely controlled three-stage drying is the defining step — together they build the jasmine, pineapple, and bergamot complexity that define this cup, while the extended Reposo rest refines it into a clean, balanced finish.

THE CUP Rich and refined — jasmine florality and pineapple sweetness up front, bergamot brightness through the middle, and a candied lemon finish. A precise, award-calibre expression of Deborah Farm's hybrid processing work.

About this variety

Coffees reported as Gesha or Geisha are often prized for a delicate, tea-like cup with lifted floral aromas and bright fruit. Jasmine, bergamot and peach are common reference points, but each lot can express them differently.

Why this one is different
  • Panama
  • Chiriquí
  • 1950 masl
  • Washed

Panamanian Geisha, especially well-traced T2722 grown at high altitude, is the classic reference for a very delicate, jasmine-led and peach-like cup.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

Why the Gesha / Geisha name matters

Gesha and Geisha are interchangeable spellings, not proof of different varieties. The best-documented Panamanian Geisha descends from Ethiopian material recorded as T2722, while other coffees carrying either spelling may not be genetically identical.

Classification Reported Gesha / Geisha

Technical lineage The reported name alone does not establish one genetic lineage. Confirmed Panamanian T2722 traces to Ethiopian landrace material.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
