INTRO Jose Londoño's first coffee to make it onto the menu — a clean, delicate separation of his Chiroso from Finca Santa Marta. Kiwi and melon lead up front with tropical fruit character, turning riper into watermelon and papaya as it cools. In the cup: tropical fruit, kiwi, and melon.
THE PRODUCER Jose Londoño runs Finca Santa Marta, a two-hectare farm in Urrao, Antioquia, where he grows 2,700 Chiroso trees with 1,800 more on the way. He purchased the farm four years ago after working on an avocado farm to save enough money for the venture, and now lives on-site, managing every aspect of production himself. He's fully committed to quality, focusing exclusively on cultivating Chiroso — this is the first time tasting his coffee, with plenty of interest in seeing where the farm goes from here.
THE PROCESS Cherries are picked at peak ripeness and depulped the next day. The seeds then ferment in tile tanks with water for three days, before being washed and dried for 8-12 days.
The three-day tank fermentation with water is the defining step — it's what builds the clean, delicate tropical fruit and kiwi character up front, developing into riper watermelon and papaya notes as the cup cools.
