INTRO From José Ignacio Gómez's Finca El Paraíso, in the village of El Naranjal near Buesaco, Nariño — a washed Gesha with plum-like fruit sweetness, lime-like acidity, and clear floral aromatics. In the cup: plum, lime, and floral.
THE PRODUCER Finca El Paraíso sits at the foot of a mountainous canyon near a water source, roughly 20 minutes from Buesaco, at an average elevation of 1,850 masl. The site receives high solar exposure through much of the year and is shaped by air currents rising through the Juanambú River canyon. Coffee cultivation began here in the 1990s; José Ignacio Gómez, a second-generation producer, has owned the farm since 2008, after acquiring it with his father from his uncle, who had originally planted and cultivated it. The farm's documented varieties include Caturra, Gesha, and Pink Bourbon.
THE PROCESS Ripe cherries are hand-harvested and visually sorted by colour, then manually sorted, washed, and density-separated through flotation on the day of collection. The sorted whole cherries ferment for 24 hours in 200-litre plastic tanks under oxygen-excluded, dark conditions. After this first fermentation, the coffee is mechanically depulped without water, then undergoes a second 24-hour fermentation with dry mucilage, again under oxygen-excluded, dark conditions. Remaining mucilage is then removed with potable water, and drying begins with five days of solar exposure, finishing mechanically for three days at approximately 35°C.
The two-stage, 24-hour fermentation sequence is the defining step — it's what builds this cup's clear separation between fruit and floral components, delivering plum sweetness and lime acidity with aromatic precision.
THE CUP Clean and well-defined — plum-like fruit sweetness up front, lime acidity through the middle, and fresh floral aromatics throughout. A precise, technically dialed-in expression of Gesha from Nariño.
