INTRO

Seven consecutive years purchasing from Ernedis Rodriguez at Finca El Paraíso — and a lot that represents the bulk of his annual income. Always the same intention: a juicy, fruit-laden Caturra field blend of great balance and a clean finish. This year brings a notable departure, with a very prominent jasmine finish that is an interesting and welcome new chapter for this perennial favourite. In the cup: plum, starfruit, and jasmine.

THE PRODUCER

Ernedis Rodriguez has been a consistent and trusted producer relationship for H&S Coffee Roasters over seven years — one of those rare partnerships built on repeat purchasing, mutual respect, and a shared commitment to quality year on year. Finca El Paraíso is situated in Gigante, Huila, and the lot H&S always purchase is the Caturra-dominant field blend that forms the economic backbone of Ernedis's yearly output. Over recent years, Ernedis has made substantial upgrades to his processing operation — improvements that continue to show in the cup, with each successive harvest delivering greater clarity and complexity.

Caturra, a natural Bourbon mutation first identified in Brazil in the early twentieth century, has been a cornerstone of Colombian specialty coffee for decades. In a well-managed field blend at altitude in Huila, it delivers the juicy, fruit-laden profile and clean acidity that make lots like this so reliable and rewarding.

THE PROCESS

The Washed process at Finca El Paraíso involves:

🍒 Hand-picking — Caturra and field blend cherries selectively harvested at peak ripeness 🔧 Depulping — Outer skin removed before fermentation 🧪 Fermentation — Beans fermented to break down remaining mucilage 💧 Washing — Thoroughly washed after fermentation to remove all residue ☀️ Drying — Dried to optimal moisture content, preserving the juicy clarity and floral character that define this lot

The meticulous washed processing is the defining step — stripping back all fruit influence to allow the Caturra's inherent juicy sweetness and tart acidity to express themselves with full clarity, while the clean finish preserves the unexpected jasmine florality that makes this year's harvest so memorable.

THE CUP

A juicy, well-balanced, and beautifully reliable washed Caturra from one of Huila's most trusted and long-standing producer relationships — tart plum sweetness and crisp starfruit acidity lead into an interesting, prominent jasmine tea finish that is a new and compelling development for this perennial favourite. Best enjoyed after 30+ days rest.

About this variety

This is a mixed or locally selected coffee population rather than one precisely identified variety. Expect the lot’s tasting notes to be more useful than a single variety stereotype.

Why this one is different
  • Colombia
  • Huila
  • Washed

In Colombia, local selection, replanting and farm history can shape a mixed population over many generations.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

Several plant types may be growing and harvested together, often reflecting a farm or region’s planting history.

Classification Mixed population

Technical lineage The individual plants are not fully separated or identified, so a single genetic lineage would be misleading.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
