INTRO
A soft expression of stone fruit, sweet forest berries, and milk chocolate from Khalid Shifa's semi-forest farm in Jimma. Perfectly balanced and sweet, with a soft, silky mouthfeel but great clarity — high acidity and forest berry notes with fruit layers and a milk chocolate finish, almost tasting like a washed coffee. In the cup: stone fruit, forest berries, and milk chocolate.

THE PRODUCER
Khalid Shifa is a third-generation coffee farmer in Gomma, Jimma, using organic farming practices and agroforestry to build resilience and microbial diversity in his soil. This Natural lot from Echemo farm was the first coffee sourced from Khalid, ahead of the washed Bedeye lot that later followed — the relationship continues through importing partner Belco.

THE PROCESS
This lot is a Natural — cherries are dried whole on Khalid's semi-forest farm, allowing the fruit to impart its character directly into the bean. This approach is what builds the forest berry sweetness and fruit layering behind this cup, while the semi-forest growing conditions keep it unusually clean and clear for a natural.

THE CUP
Silky and sweet — soft stone fruit and forest berry notes lead, with layered fruit character and high acidity, finishing on a milk chocolate note. Balanced and clean enough to nearly pass for washed.

About this variety

This is a mixed or locally selected coffee population rather than one precisely identified variety. Expect the lot’s tasting notes to be more useful than a single variety stereotype.

Why this one is different
  • Ethiopia
  • Gomma
  • 2100 masl
  • Natural

In Ethiopia, local selection, replanting and farm history can shape a mixed population over many generations.

Natural processing often brings a rounder, fruit-led expression, which can make the same variety feel quite different from a washed lot.

A little background

Several plant types may be growing and harvested together, often reflecting a farm or region’s planting history.

Classification Mixed population

Technical lineage The individual plants are not fully separated or identified, so a single genetic lineage would be misleading.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
