INTRO
An absolute favourite profile — this washed Parainema from Benjamin Paz almost tastes like Kenyan coffee, with big dark berries and a grapefruit-like acidity. Compared to the traditional washed Pacas from the area, this Parainema lot is more juicy, with a much wilder, more expressive character. In the cup: dark berries and grapefruit.
THE PRODUCER
Benjamin Paz not only grows coffee on his own farms but is also a key figure behind Beneficio San Vicente, the exclusive milling and exporting partner in Honduras this relationship is built on. Coffees bought from San Vicente producers have always been close to the heart, and the flavour profile here is one of the absolute favourites — distinct from the classic Santa Bárbara profile more commonly associated with the region.
THE PROCESS
This lot is Washed, a method that removes the fruit before fermentation and drying — allowing Parainema's naturally wild, expressive character to come through, building the big dark berry and grapefruit-like acidity that define this cup.

Bright and juicy — big dark berries lead, with a grapefruit-like acidity throughout. A wilder, more expressive departure from the area's classic washed Pacas profile.
