INTRO An anaerobic-washed Pink Bourbon from Jhoan's Las Flores farm — a producer known for remarkably expressive coffees, and this lot is no exception. Lemongrass and crisp green apple lead, with a lifted white floral note running throughout, delivering a sparkling, bright cup. In the cup: lemongrass, green apple, and white flowers.
THE PRODUCER This lot comes from Jhoan's Las Flores farm, a producer whose coffees consistently stand out for their expressiveness and clarity — a relationship this Pink Bourbon lot continues to showcase.
THE PROCESS The Anaerobic Washed process for "Silky Way" involves:
🍒 In-cherry anaerobic fermentation — 36 hours of anaerobic fermentation while still in cherry 💨 Oxidation — 12 hours of open oxidation 🌱 Post-pulping anaerobic fermentation — a further 36 hours of anaerobic fermentation after pulping 🌡️ Thermal shock — a 50°C (122°F) shock applied for 30 minutes 🔧 Mechanical drying — dried mechanically over 36 hours
The double anaerobic fermentation combined with the 50°C thermal shock is the defining step — together they build the sparkling brightness and crisp green apple character that define this cup, while locking in the lemongrass and white floral aromatics.
THE CUP Sparkling and bright — lemongrass and crisp green apple up front, with a lifted white floral note running throughout. A vivid, expressive Pink Bourbon true to Jhoan's reputation.
