INTRO Apricotini, a team favourite — this Red Honey's vibrant character and intense apricot notes made it a unanimous pick around the cupping table. Apricot jam and peach sweetness lead, with a sparkling, prosecco-like finish. In the cup: apricot jam, peach, and sparkling tea.

THE PRODUCER This lot comes from the Konga Washing Station in Ethiopia, growing Heirloom varieties at 2,100 masl.

THE PROCESS Cherries undergo 24 hours of aerobic fermentation, followed by 24 hours of anaerobic fermentation. They're then depulped and dried on shaded raised beds for around 15 days. The result leans more toward a washed profile than a natural one.

This aerobic-into-anaerobic fermentation sequence is the defining step — it's what builds the vivid apricot jam intensity and sparkling, prosecco-like character that define this cup, while keeping the profile closer to washed clarity than typical honey-process fruit.
