INTRO Grown by the Lizaraso family on plots of up to four hectares in Otocani, Cusco — a sweet, balanced Typica farmed without agrochemicals or burning, following practices passed down through generations. Milk chocolate and hazelnut sweetness sit alongside a raisin-like depth. In the cup: milk chocolate, raisin, and hazelnut.

THE PRODUCER The Lizaraso family farms in the Otocani region of Cusco, working plots of up to four hectares using generational, chemical-free farming practices. The price paid for this lot — $9.48 USD/kg — reflects the quality of the coffee produced.

THE PROCESS This lot is Washed, a method that removes the fruit before fermentation and drying — allowing Typica's naturally balanced character to come through clearly, building the milk chocolate, raisin, and hazelnut notes that define this cup.

THE CUP Sweet and balanced — milk chocolate and hazelnut sweetness up front, with a raisin-like depth running throughout. A clean, generational expression of Typica from Cusco.

  • Hazelnut
  • Raisin

How it works The fruit is removed from the coffee seed. Water and fermentation then help clear away the sticky layer before the seed is dried.

Typical influence Washed coffees are often described as clean and bright, with clear flavours, lively acidity and a crisp finish.

Coffee Variety

In this coffee

An elevated 'house espresso'. Milk chocolate and hazelnut at the top with a raisin-like sweetness throughout.

  • Hazelnut
  • Raisin
  • Milk Chocolate

About this variety

Typica is often valued for a clean, elegant and sweet cup rather than heavy intensity. Floral, citrus and soft fruit notes can appear in carefully grown lots.

Why this one is different
  • Peru
  • Cusco
  • 2100 masl
  • Washed

This Peruvian Typica is smooth and sweet, with milk chocolate and marzipan lifted by ripe blueberry. Washed processing at high elevation keeps the cup clean while preserving its rounded, comforting character. It is a farm-specific example from Cusco, with the listed tasting notes remaining the best guide to the bag.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

The Familia Ccapa lot comes from Palanganayoc in Cusco at around 2,050 metres and is organically certified. That high-grown setting and clean washed process provide more useful context than a broad claim about every Peruvian Typica.

Identification note Only one current Peruvian Typica supports this context. Its chocolate, marzipan and blueberry profile is kept specific to the high-grown washed Familia Ccapa lot.

Classification Historic Arabica family

Technical lineage Typica is one of the foundational Arabica groups that travelled from Ethiopia and Yemen through Asia before spreading widely through Latin America.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
