INTRO

From the Ccapa family at Palanganayoc in Cusco — an organically certified washed Typica grown at 2,050 MASL in the southern Peruvian Andes. Elegant, smooth, and quietly expressive. In the cup: milk chocolate, marzipan, and blueberry, with a clean, balanced finish that speaks of the family's dedication to quality and their exceptional high-altitude growing environment.

THE PRODUCER

The Ccapa family farm Palanganayoc in the Cusco region of southern Peru — one of the country's most historically and culturally significant growing areas, situated in the Andes at elevations where slow cherry maturation, rich organic soils, and cool mountain temperatures create the conditions for naturally sweet and well-structured coffees. The farm is organically certified — a reflection of a farming philosophy that prioritises the health of the soil and the sustainability of the land alongside the quality of the coffee it produces.

Typica is one of the oldest and most historically significant Arabica varieties in the world — the progenitor of many modern cultivars, first spread from Ethiopia to Yemen and onward to Java, the Americas, and beyond. In Peru, Typica accounts for a significant proportion of all coffee planted, and at high altitude in Cusco's cool, stable growing conditions, it delivers the clean, elegant, and naturally sweet cup profiles that have made this origin so quietly compelling in the specialty market.

THE PROCESS

The Washed process at Palanganayoc involves:

🍒 Hand-picking — Typica cherries selectively harvested at peak ripeness 🔧 Depulping — Outer skin removed before fermentation 🧪 Fermentation — Beans fermented to break down remaining mucilage 💧 Washing — Thoroughly washed after fermentation to remove all residue ☀️ Drying — Dried to optimal moisture content

The meticulous washed processing is the defining step — by stripping back all fruit influence, the process allows the intrinsic character of the Typica variety and the cool Cusco terroir to express themselves with the elegance, smoothness, and clean sweetness that define this lot.

THE CUP

An elegant, smooth, and beautifully balanced organic washed Typica from one of Cusco's most dedicated family farms — milk chocolate warmth, marzipan sweetness, and a blueberry brightness in a clean, refined cup with a gentle acidity and a quietly satisfying finish.

About this variety

Typica is often valued for a clean, elegant and sweet cup rather than heavy intensity. Floral, citrus and soft fruit notes can appear in carefully grown lots.

Why this one is different
  • Peru
  • Cusco
  • 2050 masl
  • Washed

This Peruvian Typica is smooth and sweet, with milk chocolate and marzipan lifted by ripe blueberry. Washed processing at high elevation keeps the cup clean while preserving its rounded, comforting character. It is a farm-specific example from Cusco, with the listed tasting notes remaining the best guide to the bag.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

The Familia Ccapa lot comes from Palanganayoc in Cusco at around 2,050 metres and is organically certified. That high-grown setting and clean washed process provide more useful context than a broad claim about every Peruvian Typica.

Identification note Only one current Peruvian Typica supports this context. Its chocolate, marzipan and blueberry profile is kept specific to the high-grown washed Familia Ccapa lot.

Classification Historic Arabica family

Technical lineage Typica is one of the foundational Arabica groups that travelled from Ethiopia and Yemen through Asia before spreading widely through Latin America.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
