INTRO From Diego Baraona's Los Pirineos farm on the slopes of the Tecapa Volcano in Usulután — Bourbon Elite, named for some of the oldest Bourbon trees in El Salvador. Black cherry and red grape sweetness lead, with a blood orange brightness rounding out the cup. In the cup: black cherry, red grape, and blood orange.

THE PRODUCER Diego Baraona's father, Gilberto Baraona, gave the name "Elite Bourbon" to the oldest Bourbon trees planted on the farm many years ago — trees believed to be among the oldest of their kind in El Salvador. The Baraona family has a long history of producing coffee, making Diego a fifth-generation producer. Excellence in coffee quality became a true dedication for Gilberto, who focused on cultivating interesting varieties and meticulous processing methods, establishing Los Pirineos as a strong name in the worldwide coffee market.

THE PROCESS This lot is Washed, a method that removes the fruit before fermentation and drying — allowing Bourbon Elite's naturally rich, structured character to come through with clarity, built on the legacy of some of El Salvador's oldest Bourbon trees.

THE CUP Rich and structured — black cherry and red grape sweetness up front, with a blood orange brightness on the finish. A fitting tribute to the Baraona family's generational dedication to Bourbon.
