INTRO From the UCANOCH Cooperative's Los Altos community in Teopisca Nuevo León, Chiapas — big, round, and full, but far from boring. Vibrant acidity and caramelised sweetness carry dried apricot depth, a pleasant pecan nuttiness, and a milk chocolate finish. In the cup: dried apricot, pecan, and milk chocolate.
THE PRODUCER Founded in 2014, UCANOCH comprises around 2,200 producers throughout Chiapas, supporting them through certifications, social welfare programmes, and exporter connections. UCANOCH is a vital ally for minority producers in Mexico — 46% of its member base are women, and nearly all belong to the Tzeltal and Tzotzil indigenous communities in Chiapas. This lot consists of deliveries specifically from the Los Altos community.
THE PROCESS Cherries are handpicked at peak ripeness and pulped the same day using manual pulpers. The coffee is then thoroughly washed with clean water and dried either in solar dryers on raised beds, where available, or on the roofs of producers' homes under the sun.
The reliance on home-roof drying, alongside solar dryers where accessible, reflects the resourcefulness woven into this cooperative model — and is part of what gives the lot its round, comforting character alongside the dried apricot and pecan notes.
THE CUP Comforting and familiar — vibrant acidity and caramelised sweetness carry dried apricot and a pleasant pecan nuttiness, finishing smooth and sweet like milk chocolate.
