INTRO

From Don Héctor Díaz at La Armenia in Pitalito — a naturally processed Pink Bourbon of sweet, balanced, and expressive character from a small 1.5-hectare family farm in one of Colombia's most celebrated coffee-growing areas. Carefully fermented, flotation sorted, and slowly dried in cherry on raised beds. In the cup: juicy, floral, and fruity.

THE PRODUCER

Don Héctor Díaz farms La Armenia at 1,800 MASL in Pitalito, Huila — a region celebrated for its volcanic soils, stable mountain microclimate, and the consistent quality of the specialty lots that emerge from its most dedicated smallholder producers. At just 1.5 hectares, La Armenia is a genuinely small family operation — every cherry picked, sorted, fermented, and dried with the hands-on attention that only a farm of this scale can provide. The results speak clearly: a sweet, balanced, and expressive Pink Bourbon with the distinct fruity and floral depth that makes this variety so sought-after in Huila.

Pink Bourbon is a variety grown primarily in Huila, genetically identified as Ethiopian Landrace and belonging to the Core Ethiopia group alongside Gesha, Chiroso, Sidra, and Aji. At 1,800 MASL in Pitalito's cool mountain conditions, its characteristic fruit expressiveness and floral complexity find ideal conditions to develop fully — and under careful natural processing, they emerge with exceptional warmth and depth.

THE PROCESS

The Natural process at La Armenia involves:

🍒 Hand-picking — Pink Bourbon cherries selectively harvested at peak ripeness 💧 Flotation sorting — Floated to remove lower-density and defective cherries before fermentation 🔒 Monitored fermentation — Cherries fermented under careful monitoring to ensure clean, controlled development ☀️ Raised-bed drying — Cherries dried in cherry on raised beds to optimal moisture content

The flotation sorting and monitored fermentation are the defining steps — by removing defects before fermentation and carefully managing the process throughout, Don Héctor ensures only the finest cherries contribute to the final cup, building the juicy fruit depth and floral sweetness that define this lot, while the raised-bed drying locks in the clean natural structure that keeps everything balanced.

THE CUP

A sweet, balanced, and expressively fruity natural Pink Bourbon from one of Pitalito's most carefully managed small family farms — juicy fruit character, a distinct floral note, and a clean natural structure that makes this an immediately accessible and deeply rewarding cup. Don Héctor Díaz's La Armenia at its most generous.

About this variety

Pink Bourbon, also sold as Rosado, is often chosen for a bright, floral and fruit-forward cup. Tropical fruit, citrus and stone fruit are useful reference points, but the lot’s own notes should lead.

Why this one is different
  • Colombia
  • Huila
  • 1800 masl
  • Natural

Colombian Pink Bourbon often feels perfumed and lifted, with orange blossom, rose, bright citrus, peach or tropical fruit and a silky, tea-like finish. The reviewed coffees range from clean washed lots to naturals and co-ferments, where processing can push the cup towards candy, spice or deeper fruit. The producer's tasting notes are the best guide to this particular bag.

Natural processing often brings a rounder, fruit-led expression, which can make the same variety feel quite different from a washed lot.

A little background

Pink Bourbon, also called Rosado, became prominent through Colombian specialty producers and is now grown across several regions. The reviewed selection shows why it is sought after: even with very different processes, floral aromatics, lively fruit and a refined texture appear repeatedly.

Identification note Pink Bourbon or Rosado is a widely used Colombian name, but genetic testing shows it is not Bourbon. Some tested lots also contained mixed plant material, so the producer's identification remains important for each coffee.

Classification Reported cultivar

Technical lineage Recent genetic testing places tested Pink Bourbon material with Ethiopian landrace coffee rather than the Bourbon family. The familiar name is retained because it is the name used by producers and roasters.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
