INTRO — A Clean, Modern Anaerobic from Nariño

This lot from Finca San Antonio represents the kind of modern Colombian processing we love—clean, structured, and expressive without veering into fermentation-driven flavors. It's a beautiful showcase of classic Colombian varieties elevated through precise technique.

Expect a cup that is sweet, silky, and gently fruit-forward, with pear-like clarity, light florals, and soft candy sweetness, all wrapped in the sparkling structure typical of high-elevation Nariño coffees.

THE PRODUCER — Nilson & Lida Cielo Lopez

Finca San Antonio is a family farm run by the husband-and-wife team Nilson and Lida Cielo López. The land was inherited from Nilson’s parents, and over the years the couple has transformed it from a traditional smallholding into a farm focused on quality-driven specialty production.

Today they cultivate Caturra and Colombia varieties, and more recently, they’ve planted Gesha, one of which Prodigal is currently milling for release. Their dedication shows in every step of processing—clean, careful, and consistently improving year after year.

THE PROCESS — Anaerobic, but Crystal Clean

Although this is an anaerobic washed coffee, it displays zero fermentation off-notes. The technique is used as a precision tool, not a flavor effect.

Processing steps include:

  • Density sorting ripe cherries to remove floaters

  • Depulping immediately after harvest

  • 42-hour anaerobic fermentation in sealed tanks

  • Washing to remove remaining mucilage

  • Drying 16–20 days on shaded raised beds for slow, even moisture loss

The result is a washed coffee with enhanced sweetness and structure, not funk.

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.

 


What does 'Filter' or 'Espresso' Roast mean?

Typically filter is roasted lighter than espresso, though this is not always the case. Several factors play into what brands a Prodigal coffee as 'filter' or 'espresso', which includes the roast profile - i.e. how the beans are roasted, not just how developed a roast it is. It doesn't preclude you from using the beans for espresso though!
